New products in cooking: Air France launches innovative menu for business passengers
In early February, Air France introduced an innovative gastronomic system for business class passengers on short-haul flights. It was developed in partnership with the renowned Servair corporate chef François Adamski, winner of the Bocuse d'Or and Meilleur Ouvrier de France awards.
The new initiative includes a dynamic menu adapted to different times of the day. Morning flights departing before 10:00 a.m. offer a delightful breakfast menu, including unique sandwiches filled with smoked salmon and dill-flavored cream cheese and pastries. On departures after 10:00 a.m., passengers are offered exclusive and gourmet "signature" sandwiches created by Adamski himself, which include combinations such as smoked chicken with paprika and tarragon on whole wheat bread, complemented by traditional French pastries such as calisson, cannelles or tropezienne. Adamski has expertly crafted these gourmet sandwiches for the convenience of short trips, prioritizing the use of fresh, local and seasonal ingredients, including French meats, poultry, dairy products, Protected Designation of Origin (PDO) and organic cheeses, and caught fish, while adhering to the airline's quality standards.
This assortment is updated monthly and presented in a stylish meal box exclusive to Business Class travelers. It is complemented by a carefully selected collection of wines and champagnes, now offered in glassware, as well as a variety of hot and cold beverages.
In order to implement sustainable food practices, food packaging and its contents are sorted on board for recycling. As a first step, Air France, with the support of Servair, is making meal boxes efficiently recyclable.
This innovation underscores Air France's commitment to improving the quality of service and tasting the richness of French gastronomy.
