Air Canada Expands Culinary Offerings on Japan Routes

Air Canada has introduced a significant upgrade to its in-flight dining experience by collaborating with Michelin-starred Chef Masaki Hashimoto. This partnership aims to provide travelers on routes between Canada and Japan with an authentic taste of traditional Kaiseki cuisine. The new menu, launched in March 2024, reflects a meticulous approach to Japanese culinary traditions, offering a refined alternative to standard airline meals. By incorporating high-quality ingredients and expert preparation, the airline seeks to redefine premium-class dining for international passengers.

The Kaiseki menu, available in Air Canada’s Signature Class, features a rotating selection of meticulously crafted dishes. Travelers can expect appetizers such as sautéed lotus root and sesame tofu with wasabi sauce, while the main course includes beef sukiyaki paired with simmered tofu, scallions, and miso soup. These meals are served on traditional Japanese dishware curated in collaboration with Noritake, enhancing the authenticity of the dining experience. Additionally, a premium sake pairing, chosen by an expert sommelier, further elevates the culinary offering, introducing passengers to the delicate balance of flavors in Japanese cuisine.
