SWISS Elevates Inflight Dining with Gourmet Cuisine from Canton Vaud
Swiss International Air Lines (SWISS) has launched a new culinary initiative, offering First and Business Class passengers gourmet dishes from Canton Vaud. This change is part of the airline's 'SWISS Taste of Switzerland' inflight dining program and features creations by Franck Giovannini from the three-Michelin-starred Restaurant de l’Hôtel de Ville in Crissier. The new menu will be available for the next three months and will also be extended to Premium Economy Class, including regional cheese specialties.
Franck Giovannini, who has been leading the renowned restaurant since 2016, brings his seasonal and innovative dishes to SWISS’s long-haul flights. The restaurant, located near Lausanne, is celebrated for its exceptional cuisine and holds 19 Gault-Millau points. Giovannini's culinary expertise promises to enhance the inflight dining experience for passengers.
"We’re delighted to familiarize our inflight guests with Canton Vaud in all its gastronomic variety through Franck’s creations," stated Julia Hillenbrand, SWISS Head of Brand Experience. The dishes will feature regional ingredients, offering a sophisticated and sensory dining experience.
First Class passengers will enjoy a starter of langoustine with tomato mousse, followed by veal filet mignon with conchiglioni pasta filled with aubergine caviar. Business Class travelers can choose between beef tenderloin with pesto polenta or grilled chicken breast with gnocchetti di Zita pasta, followed by an éclair with raspberries and caramelized pistachios.
Premium Economy Class passengers can enjoy local cheeses such as Gruyère and Bleu du Village, with an apricot tart for dessert. This marks the second year of 'SWISS Taste of Switzerland' extending to Premium Economy, offering a three-course menu inspired by the region.
Since its launch in December 2002, the 'SWISS Taste of Switzerland' program has introduced the country's regional cuisines to the skies, featuring 84 guest chefs from all 26 Swiss cantons. The program highlights regional and seasonal specialties, paired with local wines and cheeses, enriching the inflight dining experience for SWISS passengers.
