One, two, or even ten phones won't disrupt an airplane, so passengers don't have to worry about their neighbors not turning on airplane mode.

According to a 2017 survey by Allianz Global Assistance, 2 in 5 people report leaving their cell phones on during a flight, and there is no evidence that cell phone interference has ever caused a plane crash.

However, if you are asked on board an airplane to turn on airplane mode or not to use certain functions, you should listen and put your phone down.

The airline industry always knows best how their planes operate under certain conditions, so don't doubt that the request is for a good reason.
